Category A

Texas Beer Can Chicken – This is a whole chicken that is slow roasted on the bbq.  It has a beer can inside while it cooks.  The beer steams inside the chicken keeping it very moist.  The outside has a spice rub which makes the skin crispy.

Thai Beer Can Chicken – This Chicken is done the same as above but instead of being steamed with beer it's steamed with coconut milk. The chicken is marinated over night with turmeric, lime and lemongrass.

Butterflied Citrus Chicken – This chicken is marinated overnight with citrus and garlic. It's then grilled with a low heat. It keeps it's citrus flavor.

Baby Back Ribs - These ribs are rubbed down with my spice rub.  They are then cooked in a smoker for about 5 hours then basted with a homemade bbq sauce.

Roasted Pork Loin – The pork is rubbed down with my spice rub.  When it’s finished this tender pork is sliced thin and served with my homemade BBQ sauce.

Grilled Vegetables – A selection of vegetables from local markets are grilled with olive oil, balsamic vinegar and sea salt.

Homemade Pork Sausages – English • Jamaican • Hot Italian.

Homemade Chicken Sausages – Basil and Garlic • Tandoori • Jalapeño, Lime and Cilantro

Category B

Mango Pork Tenderloin – The tenderloin is stuffed with my homemade mango salsa.  It’s then wrapped with bacon and grilled.  It’s served with a fresh Mango chili puree. 

Grilled Red Snapper – Red Snapper is available year around in Samui.  It’s cooked quicly on the grill. It's then served with either an Asian dipping sauce or a fresh mango salsa.

Skewered Shrimp – These prawns are served with an Asian dipping sauce.

Category C

Leg of Lamb – The Lamb is scored then rubbed down with a garlic, rosemary, black pepper and olive oil rub.  This is slow cooked in a covered BBQ which acts as an oven and cooks it perfectly.

Butterflied Leg of LambThis is done with a Greek marinade. Served with Tzatziki sauce

Rib Eye Roast – This roast rubbed down with fresh ground black pepper and crushed garlic.  It’s cooked slow in the bbq and in one roast you will have rare cuts to medium cuts.

Grilled Norwegian SalmonServed two ways with either a dill sauce or an Asian dipping sauce

Prawns Stuffed with Herb Butter – These prawns are butterflied.  Then they are stuffed with a herb butter and finished with a squeeze of lime.

Pesto Pasta – Basil, Garlic, Parmesan, Olive Oil and oven roasted Tomatoes

Asian SlawCabbage, Carrots, Bean Sprouts, Jicama, and Sesame Seeds w/ crispy wonton strips

Spicy Jicama Slaw – Jicama, Cabbage, Roasted Pepper, Cilantro with a Mayonnaise dressing

The chart below shows what you get in each package. For example if you order the Gold package you select 4 items from category A, 2 items from category B and 1 item from category C. Also you select a 1 canapé A from the canapé page and 1 canapé from category B on the same page. Finally, you would select 3 salads.
